Pear and Raisin Rolls

As overripe pear is not a favourite, this fruit had to be made into a bread to prevent food waste.

Recipe (sugar free, oil free):
Makes 5 rolls,
Ripe pear – 1
Spelt flour – 50g
Oats – 4tbsp
Baking powder – 1/4tsp
Bicarbonate of soda – 1/4tsp
Dried instant yeast – 1/2tsp
Coconut flakes – 1/2tsp
Raisins – 10
Ground cardamom – 1/4tsp
Bioglan Cacao, Flax and Superberries Powder – 1/2tsp

Oven temperature 180°C
Chop the pear into small chunks and roughly mash it. Mix the dry ingredients together. Add the pear to the flour mix. Bring the mixture to a dough. Cover the dough and rest for one and a half hours. Split the dough into five pieces. Roll into small balls. Bake for 10 to 15 minutes.
