Spiced Scrambled Eggs

One way to make eggs taste better is to add spices.  Not that there is anything wrong with a simple boiled or scrambled egg!

Recipe (oil free, salt free):
Serves 1,
Egg – 1
Onion finely chopped – 1/4
Tomato finely chopped – 1/2
Garlic clove finely chopped – 1
Turmeric – 1/8tsp
Cumin coriander powder – 1/8tsp
Garam masala – 1/8tsp
Paprika – 1/8tsp
Fresh coriander chopped – 1tbsp

Whisk the egg. Dry saute the onion, tomato and garlic with a splash of water. Cook for a few minutes until the onions have softened. Add all of the spices and mix. Cook on a low heat, stirring the mixture until it is more of a paste like consistency. Pour in the egg and stir into the mixture. Keep stirring until the egg is cooked. Add the fresh coriander.
