Cherry Tomato Rosemary Focaccia

A new chapter and addition for Rate My Bistro has started. Introducing the oil free and salt free Foodie Adventures!

Seen as it the Great British Bake Off season, the bread week gave some inspiration. The simplicity of @cakeontherun recipes gave a fair few bakes to select from. This time a focaccia bread happened. A bread that comes together quickly and no rising time required. Hence this was right up my street when that bread craving kicked in.

Recipe (salt free, oil free):
Serves 1,
Spelt flour – 3tbsp
Oat flour – 1tbsp
Buckwheat flour – 1tbsp
Garlic granules – 1/2tsp
Dried chives – 1/2tsp
Onion powder – 1/2tsp
Baking powder – 1tsp
Yogurt – 1-2tbsp
Toppings: cherry tomatoes halved, fresh rosemary

Oven temperature 200°C
Mix all the flours, dried herbs and spices and baking powder together. Add the yogurt 1tbsp at first. Make into a dough, adding more yogurt if the dough requires it to come together, or more flour if the dough is too wet. Shape the dough into a medium disc. Make little indentations on the top of the dough. Garnish the top of the bread with the cherry tomatoes and rosemary sprigs. Bake for 15 minutes.
