Crumpet Breads

These are a cross between crumpets and bread. They have the fluffiness of crumpets.

Recipe (salt free, oil free, sugar free):
Makes 4,
Spelt flour – 1/4 cup
Rye flour – 1/4 cup
Almond milk – 1/4 cup and 30ml
Dried instant yeast – 1tsp
Baking powder – 1/8tsp

Warm the milk so it is lukewarm. Stir in the yeast and let it rest for 15 minutes. Mix the flours together. Once the milk yeast mixture has become foamy after the resting time, mix it into the flour. The batter dough will be thick. Cover the bowl and let it rest for a few hours. Stir in the baking powder.

Heat a frying pan on a low heat. Put spoonfuls of the mixture into the pan and shape them into rounds. Let the crumpets cook for 5 minutes on one side and bubbles start to appear on the top. Flip over and cook for a further couple of minutes.
