Mango Coconut Bites


What’s not to love about mango and coconut together?! These little mango, oat and coconut morsels can satisfy the sweet tooth. It only has a few ingredients and comes together in a matter of moments.

Recipe (sugar free):
Makes 5 bites,
Mango peeled – 4 slices
Ground oats – 3tbsp
Ground cardamom – 1/4tsp
Coconut flakes – 2tbsp

Toast the coconut flakes in a pan. Chop up the mango and blend into a rough puree. Add the cardamom powder to the mango. Saute the mango puree in a pan for a few minutes until it thickens slightly. Remove from the heat. Add 1tbsp of the coconut flakes and the ground oats. Once the mixture is cool enough to handle, shape them into balls. If the mixture is too wet, add extra ground oats. If it is too dry, add a splash of almond milk. Roll the mango balls in the rest of the coconut flakes. Chill in the fridge.
