Apple and Custard Pie

Apple pie and custard are a complete match and they come together in this dessert pie. Any extra apple custard filling can be served on the side.

Recipe (low sugar, oil free):
Serves 1,

Apple sliced – 1/4
Raisins – 6
Ground cardamom – 1/2tsp

For the pastry:
Rye flour – 2tbsp
Spelt flour – 1tbsp
Oat flour – 3tbsp
Almond milk – 2tbsp
Pumpkin spice – 1/2tsp
Rosewater – 1/2tsp

For the custard:
Cornflour – 1tbsp
Whittard sticky toffee pudding hot chocolate powder – 1/2tsp
Vanilla paste – 1/2tsp
Almond milk – 150ml

Oven temperature 180°CMix the pastry ingredients together to make a dough. Mould it into a lined baking dish, making the dough come up to the sides of the dish. Bake for 5 minutes either in the oven or in an air fryer.
Mix together the cornflour and hot chocolate powder. Slowly mix in the milk. Place the apples, raisins and cardamom powder in a saucepan with a splash of water. Cook on a medium heat for 5 minutes until the apples are tender, adding a splash of water if the apples become dry. Pour in the custard mix. Simmer for 5 minutes, continuously stirring, until the custard thickens. Pour the apple custard mix into the pastry baking dish. Bake for 8 minutes in the oven or for 5 minutes in an air fryer.
