Chicken and Herb Casserole

Chicken combined with all the herbs goes well with the mushrooms and peppers.

Recipe (salt free, oil free):
Serves 2,
Chicken thighs on the bone, skinless – 4
Tomato chopped – 1
Onion chopped – 1
Red pepper sliced – 1/2
Mushrooms, cut into quarters – 150g
Spelt flour – 1tbsp
Water – 150ml
Garlic clove crushed – 1
Fresh thyme sprigs – 5
Dried sage – 1tsp
Fresh basil chopped – 2tbsp
Fresh parsley chopped – 3tbsp

Saute the onions and garlic in water until the onions are soft. Add the mushrooms, tomato and red pepper. Cook for a couple of minutes. Stir in the spelt flour. Add the water slowly, continually mixing it in. Add the fresh thyme, basil, sage and parsley. Stir everything together. Add the chicken thighs and gently mix everything together. Bring to a boil and then lower the heat. Cover and simmer for 40 minutes until the chicken is cooked.
