Broccoli Soup

Just a few ingredients can transform the broccoli into a creamy hearty soup.

Recipe (oil free, salt free):
Serves 2-3,
Broccoli head, cut into florets – 1
Onion chopped – 1
Garlic cloves chopped – 2
Mixed herbs – 2tsp
Nutritional yeast – 2tbsp
Water – 200ml
Almond milk – 150ml

Saute the onion and garlic in water until they soften. Add the broccoli florets, mixed herbs, nutritional yeast and water. Bring to a boil. Simmer for 10 to 15 minutes until the broccoli is cooked and soft. Add the almond milk. Blend the cooked mixture until it is smooth.
