Mushroom Edamame Spaghetti Soup


Having the edamame noodles adds a touch of difference to this soup. Any noodles or pasta can be used to make this though.

Recipe (salt free, oil free):
Serves 1,
Onion sliced – 1
Garlic clove sliced – 1
Mushrooms quartered – 4
Baked beans rinsed – 4tbsp
Coriander cumin powder – 1 tsp
Paprika – 1 tsp
Nutritional yeast – 1/2tbsp
Edamame spaghetti – handful
Chicken stock salt free – 150ml

Mash half of the baked beans and keep the rest whole. Saute the onion and garlic in water until the onions are soft. Add the spices and nutritional yeast and cook for a minute. Add the chicken stock, mushrooms, mashed beans and simmer for a few minutes. Stir in the edamame spaghetti and the rest of the baked beans. Simmer for 5 minutes until the spaghetti is cooked.
