Cottage Cheese Bread

This bread came about when there was some cottage cheese and egg that needed using up. The bread was slightly dense. It tasted good when it was sliced thinly and toasted.

Recipe (low salt, oil free):
Makes 1 small loaf,
Spelt flour – 70g
Rye flour – 30g
Oats – 2tbsp
Fat free cottage cheese – 100g
Fat free plain yogurt – 50g
Egg – 1
Baking powder – 1/2tsp

Oven temperature 180°C
Air fryer temperature 180°C

Mix the flour, oats and baking powder together. Add the rest of the ingredients and combine everything together. Put into a small dish lined with baking paper. Cover the dish with foil and bake for 35 minutes. Uncover and continue to bake for an extra 10 to 15 minutes, until it is browned and cooked through.
