This is a take on the Caesar dish using yogurt and nutritional yeast instead of mayonnaise and cheese.
Recipe (salt free, oil free):
Serves 1,
Pollock fillet, cut in 3 pieces – 1
Garlic clove – 1
Sundried tomato – 1
Fresh parsley – 1/4 cup
Fat free plain yogurt – 5tbsp
Nutritional yeast – 1/2tbsp
Chickpea/gram flour – 1/4tbsp
Lemon juice – 1tbsp
Fresh cracked black pepper – 1/4tsp
Oven temperature 180°C
Blend together all of the ingredients apart from the fish. Coat the fish in the yogurt mixture. Put the fish and any remaining marinade in a baking dish. Cover and bake for 10 to 15 minutes until the fish is cooked.
