Smoky Sweetcorn


Sweetcorn is simply combined with spices and onions for this side dish.

Recipe (salt free, oil free):
Serves 2,
Onion chopped – 1
Tinned sweetcorn, salt and sugar free, drained – 1/2 of 325g tin
Spring onions chopped – 2
Cumin seeds – 1tsp
Mustard seeds – 1/4tsp
Smoked paprika – 2tsp
Garlic granules – 2tsp
Onion powder – 1tsp
Sumac – 1/2tsp
Nutritional yeast – 1tbsp

Toast the cumin seeds slightly and then add the mustard seeds. Let the mustard seeds pop. Add the onion. Saute in water until the onion has softened. Add the sweetcorn. Stir in all the spices and the nutritional yeast. Add a splash of water and cook on a medium heat for 5 to 8 minutes, stirring every few minutes. Add the spring onions. Let it cook for a couple of minutes.
