Tofu Scramble

Silken tofu has a softer texture than firm tofu. Here it is cooked with onion, spices and herbs. Extra vegetables can be added too.

Recipe (salt free, oil free):
Serves 1-2,
Silken tofu, drained – 340g pack
Red onion sliced – 1
Onion granules – 1/2tsp
Garlic granules – 1/2tsp
Dried sage – 1/4tsp
Dried parsley – 1/2tsp
Mustard powder – 1/4tsp
Sweet red pepper flakes – 1/2tsp
Fresh cracked black pepper – 1/8tsp
Nutritional yeast – 1tbsp

Saute the onion in water on a medium heat for 5 to 8 minutes until soft. Add more water if the onion starts to stick. Move the onion to one side of the pan. Place the tofu in the pan and break it up gently into big chunks. Let it sit in the pan for 5 minutes on a medium heat. Stir the tofu after this time, again not breaking it up too much. Add all of the remaining ingredients to the pan. Stir everything together including the onions. Let it cook for a few minutes.
