Chicken Jalfrezi

Although Chicken Jalfrezi is a dry sort of dish, this version has more of a sauce.

Recipe (salt free, oil free):
Serves 2-3,

For the marinade:
Cumin coriander powder – 2tsp
Sumac – 1tsp
Paprika – 1tsp
Turmeric – 1/4tsp

Chicken thighs on the bone, skinless – 4
Cloves – 3
Cumin seeds – 1tsp
Cassia bark -1/4 stick
Ginger minced – 2tsp
Garlic cloves crushed – 2
Green chillies minced – 1/4tsp
Paprika – 2tsp
Turmeric – 1/2tsp
Cumin coriander powder – 3tsp
Onions sliced – 2
Red pepper sliced – 1/2
Green pepper sliced – 1/2
Tomatoes cut into chunks – 2
Fat free plain yogurt – 2tbsp
Tomato puree – 4tbsp
Garam masala – 1/2 tsp
Fresh coriander chopped – 2tbsp

Mix all of the marinade ingredients together and spread over the chicken thighs. Leave to marinate overnight in the fridge.
Dry roast the whole cloves, cumin seeds and cassia bark for a few minutes. Add the chicken thighs and let it cook covered on a medium heat for a few minutes. Add the garlic, ginger, green chillies, paprika, turmeric, cumin coriander powder and a quarter cup of water. Stir with the chicken. Add the onions, peppers and tomatoes. Stir so that the chicken and vegetables combine with the spices. In a bowl, mix the yogurt with the tomato puree. Add it to the chicken along with 2 cups of hot water. Mix and cook covered on a low heat for 45 minutes, stirring it after 20 minutes. Once cooked, add the garam masala and the fresh coriander.
