Chicken Meatballs

As the meatballs are baked together with the vegetables, they stay moist.

Recipe (salt free, oil free):
Serves 2,
Chicken thighs, skinless and boneless – 3
Spring onions chopped – 2
Tomato chopped – 1
Onion minced – 1
Garlic clove – 1
Red pepper finely chopped – 1/2
Paprika – 1/2tbsp
Fresh parsley chopped – 4tbsp

Oven temperature 200°C
Place the chopped tomato and spring onions in a baking dish. Roughly process the chicken thighs in a food processor so that it is still slightly chunky. Mix the chicken with the onion, garlic, red pepper, parsley and paprika. Roll the mixture into balls. Place in the baking dish. Cover and bake for 40 minutes.
