Brussels Sprouts Pineapple Rice

This rice dish has a sweet and sour taste from the lime juice and the pineapple. It is balanced out with the different vegetables.

Recipe (salt free, oil free):
Serves 2,
Rice – 1/2 cup
Brussels sprouts sliced – 250g
Spring onions sliced – 2
Green beans chopped – 5
Tinned pineapple rings, cubed – 2
Radishes cut into chunks – 4
Fresh ginger minced – 1tsp
Fresh coriander chopped – 3tbsp
Lime juice – 1tbsp and 1/2tbsp

Cook the rice. On a medium heat, saute the Brussels sprouts, spring onions, green beans and ginger in water. The pan can be partially covered so the vegetables can steam slightly. Once the vegetables are cooked, stir in the pineapple, radishes, lime juice and the cooked rice. Cover and cook on a medium heat for 5 minutes. Add the fresh coriander.
