Mince Pie Cookies

There are times in the evening when one wants some warm freshly baked cookies. These ones hit the spot with their soft cakey texture and plump mincemeat fruits. They are perfect with a glass of milk. This version uses apple and salted caramel mincemeat. The beauty of this cookie recipe is that the flavours can easily be switched up depending on what you fancy. Jam, fruit curd, chocolate spread can be used instead of mincemeat.

Recipe (low sugar, oil free):
Makes 5,
Spelt flour –  3tbsp
Ground oats – 3tbsp
Baking powder – 1/2tsp
Fat free natural yogurt – 2tbsp
Almond milk – 1tbsp
Apple and salted caramel mincemeat – 1tsp

Oven temperature 180°C
Mix the flours with the baking powder. Add the mincemeat, milk and yogurt. Mix it all together. Put spoonfuls of the mixture on a baking tray lined with baking paper. Bake for 15 to 18 minutes.
