This mushroom vegetable sauce can be had mixed with pasta or had on its own.
Recipe (salt free, oil free):
Serves 1-2,
Red pepper sliced – 1/2
Tomato chopped – 1
Onion sliced – 1
Mushrooms sliced – 100g
Garlic clove sliced – 1
Tomato puree – 1tbsp
Nutritional yeast – 1tbsp
Dried basil – 1tsp
Dried oregano – 1tsp
Cracked black pepper – 1/8tsp
Garlic powder – 1/4tsp
Paprika – 1tsp
Almond milk – 1/4 cup
Fresh basil chopped – 2tbsp
Saute the peppers, mushrooms, onion and garlic in water for 6 to 8 minutes until the vegetables are soft. Add the tomato, tomato puree, dried herbs, nutritional yeast and milk. Stir through and cook for 5 minutes. Add the fresh basil.
