Sunshine Sardines

This is spiced sardines in a rich tomato sauce dish. It could be had on its own or with salad, bread or rice.

Recipe (salt free, oil free):
Serves 1,
Mustard seeds – 1tsp
Cumin seeds – 1tsp
Onion finely sliced – 1
Tomato chopped – 1
Frozen spinach – 1 block
Sardines in spring water salt free, drained – 120g tin
Lemon juice – 1tsp
Garlic clove sliced – 1
Smoked paprika – 1tsp
Turmeric – 1/4tsp
Fresh coriander chopped – 1tbsp

Add the mustard seeds to a hot pan. As they start to pop, add the cumin seeds. Leave to toast for a minute. Add the onions and saute in water. Cook the onions for 5 to 10 minutes until they are soft. Add the garlic and cook for a minute. Mix the turmeric and smoked paprika with water to make a paste and then add to the pan. Cook for a further minute. Add the tomatoes, tomato puree and spinach. Cook on a medium heat until the tomatoes soften. If the mixture starts to stick, add some water. Stir in the sardines and cook covered for 10 minutes on a low heat. Add lemon juice and the fresh coriander.
