Tomato Soup

A bowl of creamy tomato soup made with tinned tomatoes and almond milk.

Recipe (oil free, salt free):
Serves 1,
Onion chopped – 1
Fresh thyme chopped – 1 sprig
Tinned tomatoes – 1/2 tin
Balsamic vinegar – 1tsp
Cumin seeds – 1/2tsp
Paprika – 1tsp
Fresh basil – 1tbsp
Almond milk – 200ml

Saute the onion, garlic, cumin seeds and thyme in water until soft. Add the tinned tomatoes, paprika and balsamic vinegar. Mix and then simmer on a low heat for 30 minutes. Add the almond milk and basil. Simmer for a few minutes. Blend together.
