Breakfast Mini Muffins

Pear and strawberries with the oat and spelt flours make these little muffins.

Recipe (sugar free, oil free):
Makes 12,
Spelt flour – 1/4 cup
Oat flour – 1/4 cup
Almond milk – 1tbsp
Prune – 1
Pear – 1/2
Strawberries – 4
Ground cardamom – 1/4tsp
Instant decaffeinated coffee granules – 1/8tsp
Baking powder – 1/8tsp
Bicarbonate of soda – 1/8tsp

Oven temperature 180°C
Roughly blitz the pear, strawberries, prune, almond milk and coffee together. Mix all of the dry ingredients together. Add the fruit mixture and combine together. Put spoonfuls of the mixture into mini muffin cases. Bake in the oven for 15 minutes. Once baked, let them cool before taking out of the cases.
