Citrus Crust Fish

A citrus chickpea flour crust is the topping for the fish. Lemon marmalade contributes a slight sweetness which complements the onion and garlic. Any extra crust mix can be used to coat vegetables and baked together with the fish.

Recipe (oil free, salt free):
Serves 2,
Basa fish fillet, cut in half – 1
Garlic clove – 1
Onion small, chopped – 1
Lime juice – 1tbsp
Lemon marmalade – 1tsp
Chickpea flour – 1/4 cup
Water – 30ml

Oven temperature 180°C
Blend all of the ingredients together apart from the basa fish. Put the chickpea paste over the fish fillets. Bake for 15 to 20 minutes until the fish is cooked and has a crusty top.
