Cauliflower shines in this creamy soup.
Recipe (salt free, oil free):
Serves 1,
Leek sliced – 1
Cauliflower chopped – 1/2
Garlic clove sliced – 1
Thyme leaves – 2 sprigs
Nutritional yeast – 1/2tbsp
Almond milk – 200ml
Saute the leeks in water for 5 to 10 minutes, until the leeks are soft. Add the cauliflower, garlic, thyme leaves, nutritional yeast and milk. Simmer for 15 minutes until the cauliflower is tender. Blend the soup.
