Yogurt Masala Chicken

This chicken is coated in a tomato and yogurt marinade. Once the chicken has marinated overnight, it is an easy dish to put together.

Recipe (salt free, oil free):
Serves 2,
Chicken thighs on the bone, skinless – 4
Fat free plain yogurt – 100g
Onion sliced – 1
Tomato puree – 3tbsp
Lemon juice – 1/2tbsp
Garlic clove crushed – 1
Ginger minced – 2tsp
Green chillies minced – 1/4tsp
Cloves – 4
Cassia bark, broken in half – 1
Paprika – 1tbsp
Garam masala – 1 tsp
Water – 150ml
Fresh coriander chopped – 2tbsp

Mix together the all of the ingredients apart from the chicken, onions and fresh coriander. Add the chicken and onions to the mix. Combine everything together so that the chicken and onions are coated. Marinate in the fridge overnight. Toast the cloves and cassia bark in a pan for a couple of minutes. Add the chicken, onions and all of the yogurt marinade. Cover and cook on a medium heat for 5 minutes. Add the water and stir everything together. Cover and simmer on a low heat for 45 minutes until the chicken is cooked. Add the fresh coriander once the chicken is cooked.
