Cauliflower and Leek Stew

A creamy cauliflower and leek stew. Any remaining stew could be blended to create a soup for another meal.

Recipe (salt free, oil free):
Serves 2,
Leek sliced – 1
Cauliflower cut into florets – 1/2 head
Garlic clove crushed – 1
Paprika – 1tsp
Water – 200ml
Almond milk – 350ml
Onion roughly chopped – 1
Mixed herbs – 1tsp
Garlic granules – 1tsp
Cumin powder – 1tsp
Onion powder – 1tsp
Nutritional yeast – 1tbsp
Spelt flour – 2tbsp

Simmer the milk with the chopped onions and mixed herbs for 8 minutes. Add the cauliflower florets, garlic, leeks and paprika into a pan with the water. Steam for 10 to 15 minutes until the vegetables are tender. Add the spelt flour to the vegetables and water. Stir in the hot milk, onions, nutritional yeast, garlic granules, cumin and onion powder. Simmer for 10 minutes until the sauce has thickened.
