The mackerel is nestled amongst the vegetables so that all the herbs and spices flavour the fish in the bake.
Recipe (oil free, salt free):
Serves 1,
Mackerel fillet, cut into 3 – 1
Onion sliced – 1/2
Cherry tomatoes halved – 8
New potato sliced – 1/2
Green beans halved – 6
Garlic clove chopped – 1
Garlic powder – 1tsp
Sumac – 1tsp
Allspice – 1/8tsp
Paprika – 1tsp
Lemon juice – 2 tsp
Fresh rosemary chopped – 1 sprig
Fresh parsley chopped – 1tbsp
Oven temperature 180°C
Mix all of the ingredients together as well as the mackerel fillets. The fish will get coated in all the spices and herbs. Put in a baking dish. Cover tightly with foil. Bake for 20 to 25 minutes until the fish and the vegetables are cooked.
