Mexican Mushrooms

Tangy mushrooms and onions are roasted with a combination of spices.

Recipe (salt free, oil free):
Serves 1,
Mushrooms, cut into chunks – 6
Onion sliced – 1
Lime juice – 2tbsp
Onion granules – 1tsp
Dried oregano – 1tbsp
Ground cumin – 2tsp
Garlic powder – 2tsp
Smoked paprika – 1tsp
Fresh coriander chopped – 1tbsp
Chickpea flour – 1tbsp

Oven temperature 200°C
Mix all of the dry spices together. Add the coriander, chickpea flour and lime juice. Mix in the mushrooms and onions so that they are coated in the mixture. Spread out the mushrooms, onions and the mix on a baking tray. Roast for 20 to 25 minutes.
