Pretzel Sticks

Boiling the bread dough with bicarbonate of soda gives a slight salty flavour to the pretzel sticks. If you want a softer pretzel stick, bake them for a couple of minutes less.

Recipe (salt free, oil free):
Makes 4 small sticks,
Buckwheat flour – 3tbsp
Oat flour – 3tbsp
Fat free yogurt – 1/2tbsp
Sundried tomato chopped – 1
Nutritional yeast – 1tbsp
Baking powder – 1tsp
Onion granules – 2tsp
Garlic powder – 1tsp
Mixed herbs – 1tsp
Almond milk – 2tbsp
Yeast – 1tsp
Water – 150ml
Bicarbonate of soda – 1tbsp

Oven temperature 180°C
Warm the milk just slightly and then stir in the yeast. Let the yeast mixture sit for 10 minutes.
Mix the flours, baking powder, mixed herbs, garlic powder, onion granules and sundried tomato together. Add in the yogurt and the yeast mixture. Bring the mix into a dough and knead for 5 minutes. Cover and leave to rest for 1 hour. After the hour, split the dough into four pieces. Make into stick shapes. Cover and rest for 15 minutes.
Boil the water and add the bicarbonate of soda. Lower to a simmer. Add the bread sticks. After 10 seconds, turn the sticks over in the water. After a further 10 seconds, take out the pretzel sticks. Bake for 8 minutes.
