The mash is made more interesting and flavoursome with it being spiced and cauliflower based.
Recipe (salt free, oil free):
Serves 1-2,
Cauliflower – 1/2
Cumin seeds – 1/2tsp
Mustard seeds – 1/2tsp
Ajwain seeds – 1/4tsp
Amchoor powder – 1/2tsp
Turmeric – 1/2tsp
Cumin coriander powder – 1/2tsp
Paprika – 1/2tsp
Garam masala – 1/4tsp
Garlic clove crushed – 1
Ginger minced – 1tsp
Green chillies chopped – 1/4tsp
Fresh coriander, chopped – 2tbsp
Steam the cauliflower for 15 to 20 minutes or pressure cook it for 10 minutes, until the cauliflower is soft. Roughly mash the cauliflower. Dry roast the cumin seeds, ajwain seeds and mustard seeds for a few minutes. Once the mustard seeds start popping, add all of the other ingredients apart from the cauliflower and fresh coriander. Add 3tbsp of water so the spices don’t stick in the pan. Saute for a few minutes. Add the mashed cauliflower and mix everything together. Cover and cook on a low heat for 10 minutes, stirring halfway to make sure the cauliflower is not sticking. Add the fresh coriander.
