Spinach and chicken is cooked together for this curry.
Recipe (salt free, oil free):
Serves 2,
Chicken drumsticks skinless – 2
Chicken thighs on the bone, skinless – 2
Onion chopped – 1
Tomato chopped – 1
Frozen chopped spinach – 5 blocks
Mustard seeds – 1tsp
Fresh coriander chopped – 1tbsp
Chicken mix:
Garlic clove crushed – 1
Ginger minced – 2tsp
Green chillies minced – 1/8tsp
Turmeric – 1/2tsp
Paprika – 1tsp
Coriander cumin powder – 2tsp
Garam masala – 1/2tsp
Mix the chicken with all of the chicken mix spices. Add the mustard seeds to a hot pan and let them pop for a couple of minutes. Add the onion and tomato. Saute for 5 minutes adding a splash of water if the onions start to stick. Add the spinach and the chicken. Cover and simmer for 45 minutes, stirring half way through. If you are using a slow cooker, cook on high for 2 hours and 30 minutes. Add in the fresh coriander.
