This aubergine dip uses steamed aubergine and yogurt.
Recipe (salt free, oil free):
Serves 1,
Aubergine – 1/2
Garlic clove – 1
Cumin powder – 1/2tsp
Cracked black pepper – pinch
Fat free plain yogurt – 1tbsp
Lemon juice – 1/2tsp
Dried parsley – 1/2tsp
Smoked paprika – pinch
Score the aubergine flesh. Steam the aubergine and garlic clove for 5 to 10 minutes until they are soft and cooked. Scoop out the aubergine flesh. Blend the aubergine and garlic with the rest of the ingredients.
