Spinach and Peas Curry

Spinach cooked with the sweet onions and peas makes this curry a flavoursome dish.

Recipe (salt free, oil free):
Serves 2,
Frozen spinach – 1 cup and 1/2 cup
Frozen peas – 4tbsp
Onion sliced – 1
Tomato chopped – 1
Garlic loved crushed – 1
Ginger minced – 1tsp
Green chillies minced – 1/4tsp
Cumin seeds – 1tsp
Mustard seeds – 1tsp
Fenugreek seeds – 1/2tsp
Turmeric – 1/2tsp
Paprika – 1tsp
Coriander cumin powder – 1tsp
Amchoor powder – 1tsp
Garam masala – 1/4tsp
Fresh coriander chopped – 2tbsp

Add the mustard seeds, cumin seeds and fenugreek seeds to a hot pan. Cover and let the mustard seeds start to pop. Add the onion, garlic, ginger and green chillies. Saute in water for 5 minutes. Add the spinach. Cover and cook for 10 minutes on a low heat, stirring every so often. Add all of the dry spices, tomato and peas. Stir and cook covered on a medium heat for 5 minutes. Add the garam masala and fresh coriander.
